Green Apple and Peanut Butter - Serves 1
Prep time: 5 minutes
This tasty open-faced “sandwich” is a quick and easy pick-me-up snack when midday hunger strikes and time is tight.  Note: Count the 1 tablespoon of peanut butter as half of your total nuts allowed for the day (Agatston, 2005, p. 94).
1 tablespoon creamy or crunchy trans-fat-free peanut butter
1/2 Granny Smith apple, thinly slices.  

Pecan Stuffed Dates
Prep Time: 5 minutes  
Cook time: 20 minutes
This  sweet and crunchy snack couldn’t be simpler.  Nutritionally, does offer potassium and fiber, and pecans provide heart-healthy monounsaturated and polyunsaturated fats, which can lower blood cholesterol (Agatston, 2005, p. 95).
24 pecan halves
24 dates, pitted

Heat oven or toaster oven to 350 F. Spread pecans on a baking tray and bake until lightly toasted and fragrant, about 10 minutes.  Cook 5 minutes.  Slice dates lengthwise but not all the way through.  Place 1 pecan inside each date and use your fingers to close and reseal dates.  Store in an airtight container at room temperature for up to 2 weeks.
